Instructions
  1. Place cashews in warm water and let soak for 2 hours. Drain and add to a food processor.
  2. Add the rest of the ingredients to the food processor and blend until smooth.
Recipe Notes

You may need to add a bit more oil or lime juice to get the desired consistency.

Serve over a bowl of fruit and yogurt or hot cereal for a great any time snack!

With a great balance of protein,, fiber and antioxidants…ahhhh who cares about that $#!T….it tastes great!!! And it is crazy simple to prepare, using yellow or red thai curry paste and rich coconut cream.

Decadent Chocolate Chip Cookies

These ooey, gooey, decadent chocolate chip cookies are so fast and easy to make they’ll have that sweet craving satisfied in no time.

 Seriously though if you like chocolate, or cookies, or sweets in general, these cookies are for you!  They come out perfect with all purpose wheat flour or with my all purpose gluten free flour blend.

Instructions
  1. Preheat oven to 350 degrees fahrenheit.
  2. Using a paddle attachment on an electric mixer beat butter, cane and brown sugar until soft and fluffy.
  3. Reduce speed to low, add vanilla and egg. Beat until well incorporated.
  4. Add flour, salt and baking soda, beating until soft.
  5. Grate Hershey bar into cookie dough. Fold in chocolate chips until evenly distributed.
  6. Drop by heaping tablespoons onto cookie sheet, placing about 2 inches apart. Flatten slightly.
  7. Bake for 10-12 minutes until the bottoms are golden but cookies are still soft.
  8. Cool and enjoy!
Recipe Notes

Little tip:  If using the GF flour blend cut the sugar by 1/4 cup as the GF flours tend to be on the sweet side.

  1. Preheat oven to 325F Whisk together egg yolks and 1/2 cup sugar. In a medium saucepan mix cream, vanilla and colouring, until its the shade of red you desire. Bring just to a boil, remove from heat and let stand 10 minutes. Slowly pour the egg mixture into the 'bloody' concoction. Pour mixture evenly into 4 ramekins and place into a deep baking dish. Fill the baking dish with hot water halfway up the ramekins and back for 40 minutes, or until the custards look stiff and set. Remove from over and refrigerate for at least 2 hours. Remove from fridge and pour a thin layer of sugar over each ramekin. Place under the broiler for about 5 minutes, or until the sugar bubbles and turns golden brown. Serve to your ghoulish guests and Happy Halloween!

Orange Maple Cranberry Sauce

This is a great make-ahead side for Thanksgiving, Christmas, Easter, or really anytime you want cranberry sauce! Hell, I like to make it once in a while just to pour over vanilla ice cream! Who says cranberries are just for the holidays anyway? Besides, aren’t they full of vitamins or something?!?

The richness from the (Canadian) maple syrup is nicely balanced by the tang of the orange, the zing of the cranberries and the kick of the black pepper! Give ’em a try, you won’t be disappointed!

  1. Rinse cranberries and put in a medium sauce pot over medium heat. Squeeze the juice of 1/2 an orange into the pot. Zest the 1/2 orange. Add the maple syrup and grind in the black pepper. Stir. Simmer 10-15 minutes (stirring occasionally) until most of the cranberries have split and the sauce thickens. Remove from heat and let cool.
